Abstract:
Detection and characterization of chilling injury is especially difficult since most symptoms appear only after the product is removed from chilling condition. Furthermore, most symptoms appeared to be a secondary response to low temperature condition, the primary response being physical in nature that includes membrane alteration and protein/enzyme dysfunction (Jackman et al., 1988). This study identified relevant microstructural properties to help describe the microstructural changes during chilling injury development, which is seen as a decrease in porosity, increase in pore fragmentation, and increase in pore size due to tissue breakdown and cavity formation in chill injured samples. This study showed the general feasibility of X-ray CT analysis in characterizing microstructure of mango during chilling injury development.
