Abstract: Differential scanning calorimetry (DSC), and the standard and inverse variant of the photopyroelectric technique (PPE) were applied to monitor the progress of oxidation induced in thermally stressed safflower oil. The results obtained by these thermal characterization methods were compared to those acquired by the gas chromatography (GC) and Rancimeter apparatus. Analytical indices were compared and the correlation coefficients calculated.
