Abstract: Purification and concentration of a polyphenol extract from potato peels was attempted by membrane filtration as part of the INTERREG IV A meCagrO2 project. Preliminary ultrafiltrations show that about 45 % of the total organic carbon is retained while polyphenols are retained by only 15 %. A full micro-, ultra- and nanofiltration sequence results in a polyphenol concentration factor 2.6. Based on polyphenol content to dry weight ratio a purification by factor 1.7 is reached. In the ultrafiltration, the toxic alpha-solanine is largely separated from the useful polyphenols. The anti-oxidant capacity was measured using square wave voltammetry.
