Abstract: In this paper the stability phase diagram for proteins and starch is discussed and the role of hydration and the cavities is emphasized. Examples of experimental approaches show that infrared spectroscopy is particularly suited for the study of protein unfolding and aggregation. The temperature and pressure effects on water and the relation to the stability diagram of biopolymers are considered together with recently reported results on synthetic polymers in the absence of any solvent.
